Ingredients
  

8 oz chow mein noodles (fresh or dried)

1 lb chicken breast, thinly sliced

2 tablespoons vegetable oil (divided)

2 cups mixed vegetables (bell peppers, carrots, broccoli, and snow peas)

3 cloves garlic, minced

2 green onions, sliced (for garnish)

For the Best Chow Mein Sauce:

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

1 teaspoon sugar

1/2 teaspoon freshly ground black pepper

Optional: crushed red pepper flakes to taste

Instructions
 

Prepare the Noodles

    If using dried chow mein noodles, cook them according to package instructions until al dente. Drain and rinse under cold water. Toss with a little vegetable oil to prevent sticking. If using fresh noodles, set them aside.

      Make the Chow Mein Sauce

        In a small bowl, combine soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and black pepper. Mix well and set aside.

          Cook the Chicken

            In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

              Stir-Fry the Vegetables

                In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and mixed vegetables and stir-fry for 3-5 minutes or until vegetables are tender-crisp.

                  Combine Everything

                    Return the cooked chicken to the skillet with the stir-fried vegetables. Add the cooked chow mein noodles and pour the prepared chow mein sauce over everything. Toss well to coat all ingredients in the sauce.

                      Thicken the Sauce

                        Add the cornstarch mixed with water to the skillet, stirring constantly until the sauce thickens, about 1-2 minutes. Adjust seasoning or add crushed red pepper flakes for extra heat if desired.

                          Serve

                            Remove from heat, garnish with sliced green onions, and serve hot immediately.
