8 oz. fresh egg noodles (or spaghetti)

1 lb. boneless, skinless chicken thighs, sliced

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1 cup bell peppers, thinly sliced (mix of colors)

1 cup snap peas, trimmed

1 cup carrots, julienned

3 green onions, chopped (white and green parts separated)

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

2 teaspoons cornstarch

1 tablespoon water

Salt and pepper to taste

Sesame seeds, for garnish

Prepare the Noodles: Cook the egg noodles according to package instructions. Drain and set aside, tossing with a little sesame oil to prevent sticking.

    Marinate the Chicken: In a bowl, combine the sliced chicken, soy sauce, oyster sauce, salt, and pepper. Let it marinate for about 15 minutes.

      Stir Fry Vegetables: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

        Add Chicken: Toss the marinated chicken into the skillet and cook until it's golden brown and cooked through, about 5-7 minutes, stirring frequently.

          Incorporate Vegetables: Add the bell peppers, snap peas, carrots, and the white parts of the green onions to the skillet. Stir-fry for another 3-4 minutes until vegetables are tender but still crisp.

            Combine Cornstarch Mixture: In a small bowl, mix the cornstarch and water until smooth. Pour this mixture into the skillet, stirring to combine and thicken the sauce.

              Add Noodles: Gently add the cooked noodles to the skillet, tossing everything together so that the noodles are well coated in the sauce. Stir-fry for an additional 2 minutes until heated through.

                Finish & Serve: Remove from heat, sprinkle with the green parts of the onions, and garnish with sesame seeds.
