1.5 lbs chicken thighs, boneless and skinless, cut into bite-sized pieces

2 tablespoons Massaman curry paste

1 can (14 oz) coconut milk

2 medium potatoes, diced

1 onion, chopped

2 carrots, sliced

1/2 cup roasted peanuts, chopped

1 tablespoon fish sauce

1 tablespoon tamarind paste (or 1 tablespoon lime juice)

2 tablespoons brown sugar

2 cups chicken broth

Fresh cilantro for garnish

Salt to taste

2 tablespoons vegetable oil

1 teaspoon ground cinnamon

1 teaspoon ground cumin

1 teaspoon cardamom (optional)

Instructions
 

Sauté Aromatics: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

    Add Curry Paste: Stir in the Massaman curry paste and cook for another minute to release the flavors.

      Brown the Chicken: Add the chicken pieces to the pot, stirring to coat with the curry paste. Cook for about 5-7 minutes until the chicken is lightly browned.

        Combine Ingredients: Pour in the coconut milk and chicken broth. Add the diced potatoes, sliced carrots, fish sauce, tamarind paste, brown sugar, ground cinnamon, ground cumin, and cardamom. Stir well to combine.

          Simmer: Bring the mixture to a boil, then reduce heat to low and let it simmer for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

            Adjust Seasoning: Taste and adjust the seasoning with salt, more fish sauce, or lime juice if necessary.

              Serve: Once ready, stir in the chopped roasted peanuts for crunch. Garnish with fresh cilantro before serving.
