1 lb ground chicken

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 clove garlic, minced

1 egg, beaten

1 tsp salt

1/2 tsp black pepper

1/2 tsp Italian seasoning

For the Piccata Sauce:

1/4 cup unsalted butter

1/4 cup olive oil

2 cloves garlic, minced

1/2 cup chicken broth

2 tbsp capers, drained

Juice of 1 lemon

Salt and pepper to taste

Fresh parsley, for garnish

Instructions
 

Prepare the Meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, beaten egg, salt, pepper, and Italian seasoning. Mix until well combined.

    Form Meatballs: Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.

      Cook the Meatballs: In a large skillet, heat a mix of butter and olive oil over medium heat. Add meatballs in batches and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.

        Make the Piccata Sauce: In the same skillet, add more butter and olive oil if needed. Sauté minced garlic until fragrant, approximately 1 minute.

          Add Liquid Ingredients: Pour in chicken broth, capers, and lemon juice. Stir to combine and bring to a simmer. Allow to cook for 3-4 minutes until slightly thickened.

            Combine Meatballs and Sauce: Return the meatballs to the skillet and coat them with the sauce. Simmer for an additional 5 minutes until meatballs are cooked through.

              Garnish and Serve: Season the sauce with salt and pepper to taste. Garnish with freshly chopped parsley before serving over pasta or rice.
