500g boneless chicken breasts, sliced into strips

200g mushrooms, sliced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 cup sour cream

1 tablespoon Dijon mustard

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

300g egg noodles or pasta of choice

Instructions
 

Cook the Noodles: Begin by boiling salted water in a large pot. Cook the egg noodles according to package instructions until al dente. Drain and set aside, drizzling with a bit of olive oil to prevent sticking.

    Sauté the Chicken: In a large skillet over medium heat, add 1 tablespoon of olive oil and 1 tablespoon of butter. Once melted, add the sliced chicken strips, season with salt, pepper, and paprika. Sauté until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and garlic. Sauté until the onion becomes translucent and fragrant, about 3 minutes. Then add the sliced mushrooms and cook until softened, about another 5 minutes.

        Create the Sauce: Pour in the chicken broth and stir, scraping any browned bits from the bottom of the skillet. Bring the mixture to a simmer, then reduce the heat to low.

          Add Creamy Ingredients: Stir in the sour cream and Dijon mustard until the sauce is smooth and creamy. Return the cooked chicken to the skillet and mix well. Let it simmer gently for about 5 minutes to heat through and thicken slightly. Adjust seasonings with more salt and pepper if desired.

            Combine: Add the drained noodles to the skillet and toss everything together until the noodles are well coated with the creamy sauce.

              Serve: Plate your Chicken Stroganoff and garnish with freshly chopped parsley for a burst of color and flavor.
