Ingredients
  

2 cups cooked chicken, shredded

1 cup grated cheese (cheddar or Monterey Jack)

1/2 cup cream cheese, softened

1/4 cup cilantro, chopped

1 tsp garlic powder

1 tsp onion powder

1 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

12 small corn tortillas

Oil for frying

Salsa and sour cream for serving

Instructions
 

In a large bowl, combine the shredded chicken, grated cheese, cream cheese, cilantro, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix until well combined.

    Heat a small amount of oil in a skillet over medium heat. Lightly fry each tortilla for about 10-15 seconds per side, just enough to soften them; avoid making them crispy. Remove and place on a paper towel to drain excess oil.

      Prepare a baking sheet lined with parchment paper and preheat your oven to 200°F (93°C) to keep the taquitos warm.

        Working with one tortilla at a time, place about 2 tablespoons of the chicken mixture onto the lower third of the tortilla. Roll tightly and secure with a toothpick if necessary.

          In a large skillet, heat oil over medium-high heat (enough to submerge the taquitos halfway). Once the oil is hot, carefully place the rolled taquitos seam-side down in the skillet, frying in batches.

            Fry for about 3-4 minutes or until golden brown and crispy, flipping halfway through. Drain on paper towels.

              Keep the fried taquitos warm in the oven while you finish frying the rest.

                Serve hot with salsa and sour cream for dipping. Enjoy your delicious crispy chicken taquitos!
