1 cup ditalini pasta

2 cans (15 oz each) canned chickpeas, drained and rinsed

1 large onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 red bell pepper, diced

4 cups vegetable broth

1 can (14 oz) diced tomatoes, with juices

2 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley or basil for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic, diced carrots, celery, and red bell pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the vegetables have softened.

      Add the drained chickpeas, diced tomatoes (with their juices), vegetable broth, dried oregano, cumin, smoked paprika, salt, and pepper. Stir to combine and bring the mixture to a boil.

        Once boiling, reduce the heat to low and let it simmer for 15 minutes.

          While the soup is simmering, cook the ditalini pasta separately according to the package instructions until al dente. Drain and set aside.

            After 15 minutes, stir in the chopped spinach and cooked ditalini pasta. Allow the soup to simmer for another 5 minutes until the spinach has wilted.

              Taste and adjust the seasoning with more salt and pepper if necessary.

                Serve hot, garnished with fresh parsley or basil if desired.
