4 large Russet potatoes

2 cups chili (homemade or canned)

1 cup shredded cheddar cheese

1 cup sour cream

1/2 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Olive oil for drizzling

Preheat your oven to 400°F (200°C).

    Scrub the Russet potatoes thoroughly under cold water and pat them dry. Poke several holes in each potato with a fork to allow steam to escape.

      Rub each potato with a little olive oil and sprinkle with salt. Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until the potatoes are tender when pierced with a fork.

        While the potatoes are baking, heat the chili in a saucepan over medium heat. Stir in garlic powder, cumin, salt, and pepper, and let simmer until heated through.

          Once the potatoes are done, remove them from the oven and let them cool slightly. Slice each potato lengthwise, being careful not to cut all the way through.

            Gently press the sides of each potato to open them up. Fluff the insides with a fork.

              Spoon a generous portion of warm chili into each potato.

                Sprinkle shredded cheddar cheese on top of the chili and return the potatoes to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                  Remove the potatoes from the oven. Top each one with a dollop of sour cream and a sprinkle of chopped green onions.
