Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

Zest and juice of 2 limes

2 teaspoons chili powder

1 teaspoon garlic powder

Salt and pepper to taste

1 cup fresh pineapple, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, deseeded and minced

1/4 cup fresh cilantro, chopped

Extra lime wedges for serving

Instructions

Prepare the Marinade: In a small bowl, mix together the olive oil, lime zest, lime juice, chili powder, garlic powder, salt, and pepper.

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure they are well-coated, then cover and refrigerate for at least 30 minutes.

Make the Pineapple Salsa: In a mixing bowl, combine the diced pineapple, red onion, red bell pepper, jalapeño, cilantro, and a squeeze of lime juice. Mix gently until well combined. Set aside to let the flavors meld while you grill the salmon.

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F/190°C). If using a grill pan, heat it over medium heat on the stove.

Grill the Salmon: Remove the salmon from the marinade and place it on the grill, skin-side down. Cook for about 6-8 minutes on each side, depending on thickness, until the salmon is cooked through and flakes easily with a fork.

Serve: Plate the grilled salmon fillets and top with the fresh pineapple salsa. Garnish with additional lime wedges.

              Prep Time: 30 minutes | Total Time: 1 hour | Servings: 4

                - Presentation Tips: Serve the salmon on a large platter and spoon the pineapple salsa generously over the top. Include lime wedges and a sprinkle of fresh cilantro for added color and freshness.
