1 lb (450g) Velveeta cheese, cubed

1 cup (240ml) heavy cream

1 can (15 ounces) chili (with or without beans, your choice)

1 cup (120g) shredded pepper jack cheese

½ cup (80g) diced tomatoes with green chilies (such as Ro-Tel)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

½ teaspoon paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a medium saucepan over medium-low heat, add the Velveeta cheese and heavy cream. Stir occasionally until the cheese has melted and the mixture is smooth.

    Add the diced onion and minced garlic to the saucepan and sauté for about 3-4 minutes until the onion is translucent.

      Stir in the chili, shredded pepper jack cheese, diced tomatoes with green chilies, ground cumin, and paprika. Mix everything together until well combined and heated through, about 5-7 minutes.

        Season the dip with salt and pepper to taste. Make sure to taste the dip as you season, adjusting for flavor.

          Once everything is melted and creamy, remove from heat and transfer to a serving bowl.

            Garnish with freshly chopped cilantro on top for a burst of color and freshness.

              Serve warm with tortilla chips for dipping.
