Ingredients
  

250g spaghetti or linguine

300g large prawns, peeled and deveined

4 cloves garlic, minced

2 red chillies, finely sliced (adjust to taste)

1/4 cup extra virgin olive oil

1/2 teaspoon red pepper flakes (optional for extra heat)

1 lemon, juiced and zested

1/4 cup fresh parsley, chopped

Salt and black pepper to taste

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Prawns: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced chillies, cooking for about 2 minutes until the garlic is fragrant but not browned.

      Add Prawns: Increase the heat to medium-high and add the prawns to the skillet. Season with salt, black pepper, and red pepper flakes (if using). Sauté the prawns for about 3-4 minutes until they turn pink and opaque.

        Combine Pasta and Sauce: Reduce heat to medium. Add the cooked pasta and reserved pasta water to the skillet. Toss everything together, allowing the pasta to soak up the flavors. Add the lemon juice and zest, and toss again.

          Finish with Herbs: Stir in the chopped parsley and adjust seasoning with more salt and pepper if necessary.

            Serve: Plate the pasta and prawns, topping with grated Parmesan cheese and a sprinkling of extra parsley if desired.
