1 lb (450g) beef sirloin, thinly sliced against the grain

2 large onions, thinly sliced

1 red bell pepper, sliced

3 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons ground black pepper

1 tablespoon cooking oil (vegetable or sesame)

1 teaspoon sugar

3 green onions, chopped for garnish

Sesame seeds for garnish (optional)

Instructions
 

In a bowl, combine the sliced beef with soy sauce, oyster sauce, cornstarch, and half of the black pepper. Mix well and let it marinate for 15-20 minutes.

    Heat the oil in a large pan or wok over medium-high heat until shimmering.

      Add the marinated beef to the pan and stir-fry for about 3-4 minutes until the beef is browned but not fully cooked. Remove from the pan and set aside.

        In the same pan, add the thinly sliced onions and red bell pepper. Stir-fry for about 4-5 minutes until the onions become translucent and slightly caramelized.

          Add the minced garlic and grated ginger to the pan, continuing to cook for another minute until fragrant.

            Return the beef to the pan with the onions and peppers. Add sugar and the remaining black pepper, and stir everything together.

              Stir-fry for an additional 2-3 minutes, or until the beef is fully cooked and tender.

                Remove from heat, and garnish with chopped green onions and sesame seeds if desired.
