2 cups shredded cooked chicken (rotisserie chicken works well)

4 cups mixed greens (like romaine and spinach)

1 cup purple cabbage, shredded

1 cup carrots, grated

1/2 red bell pepper, thinly sliced

1/4 cup green onions, chopped

1/2 cup roasted peanuts or cashews (unsalted)

1/4 cup fresh cilantro, chopped

1/2 cup mandarin oranges (canned or fresh)

1/4 cup chow mein noodles (for crunch)

Dressing:

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, grated

1 teaspoon garlic, minced

1 tablespoon sesame seeds (for garnish)

Instructions
 

Prep the Base: In a large salad bowl, combine the mixed greens, shredded chicken, purple cabbage, carrots, red bell pepper, green onions, and fresh cilantro.
