1 pound chicken thighs, boneless and skinless

1 tablespoon olive oil

2 tablespoons chipotle in adobo sauce, chopped

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon oregano

Salt and pepper to taste

8 small corn tortillas

1 cup shredded red cabbage

½ cup fresh cilantro, chopped

1 avocado, sliced

1 lime, cut into wedges

Optional: ½ cup sour cream or Greek yogurt

Instructions
 

In a mixing bowl, combine the olive oil, chopped chipotle in adobo, smoked paprika, garlic powder, cumin, oregano, salt, and pepper to create a marinade.

    Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and let the chicken marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

      Preheat your grill or a skillet over medium-high heat. Once hot, add the marinated chicken thighs.

        Cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

          Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.

            While the chicken rests, warm the corn tortillas on a dry skillet for about 30 seconds on each side until pliable.

              To assemble the tacos, place a few strips of chicken on each tortilla. Top with shredded red cabbage, slices of avocado, and fresh cilantro.

                Squeeze fresh lime juice over the toppings for extra flavor. Add a dollop of sour cream or Greek yogurt if desired.
