Chipotle Salmon with Mango Avocado Salsa

Ingredients
  

For the Chipotle Salmon:

4 salmon fillets (6 oz each)

2 tablespoons chipotle chili powder

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon brown sugar

1 tablespoon olive oil

Salt and pepper to taste

Lime wedges for serving

For the Mango Avocado Salsa:

1 ripe mango, peeled and diced

1 ripe avocado, diced

1/4 red onion, finely chopped

1 small jalapeño, seeded and minced (optional)

Juice of 1 lime

Fresh cilantro, chopped (about 1/4 cup)

Salt and pepper to taste

Instructions
 

Prepare the Salsa:

    - In a medium bowl, combine the diced mango, avocado, red onion, and jalapeño (if using).

      - Drizzle with lime juice and gently fold in chopped cilantro. Season with salt and pepper to taste. Set aside for flavors to meld.

        Prepare the Chipotle Seasoning:

          - In a small bowl, mix together chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, brown sugar, salt, and pepper.

            Season the Salmon:

              - Pat the salmon fillets dry with paper towels. Rub olive oil on both sides of each fillet.

                - Generously coat the salmon with the chipotle seasoning mixture, pressing gently to adhere.

                  Cook the Salmon:

                    - Preheat a grill or grill pan over medium-high heat.

                      - Once hot, place the salmon fillets skin-side down (if applicable) on the grill. Cook for about 4-5 minutes on each side, depending on the thickness of the fillets, until the salmon is cooked through and flakes easily with a fork.

                        Serve:

                          - Plate the cooked salmon and spoon the mango avocado salsa generously over the top. Serve with lime wedges on the side for an extra burst of flavor.
