Ingredients

1 cup pecan halves

1 cup semi-sweet chocolate chips

1 cup caramels, unwrapped (or 1 cup homemade caramel)

2 tablespoons heavy cream

1 teaspoon vanilla extract

Pinch of salt

Sea salt flakes (for garnish, optional)

Instructions

Prepare the Pecans: Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet and toast them in the oven for about 8-10 minutes, or until they are fragrant and lightly browned. Keep an eye on them to avoid burning. Once toasted, remove from oven and allow to cool.

Melt the Caramels: In a medium saucepan, combine the unwrapped caramels and heavy cream over medium-low heat. Stir continuously until the caramels are melted and the mixture is smooth.

Add Vanilla and Salt: Remove the caramel from heat and stir in the vanilla extract and a pinch of salt, mixing well until fully incorporated.

Prepare Clusters on Baking Sheet: Line a baking sheet with parchment paper. Place a tablespoon of the toasted pecans on the paper, pressing them together slightly to form a small mound. Repeat until all pecans are used.

Add Caramel: Using a teaspoon, drizzle the melted caramel over each mound of pecans, covering them completely.

Melt the Chocolate: In another saucepan or microwave, melt the chocolate chips until smooth. If using a microwave, heat in 30-second intervals, stirring between each interval to prevent burning.

Coat with Chocolate: Spoon melted chocolate over the caramel-covered pecans, ensuring each cluster is well-coated. If desired, leave a small portion of caramel or pecans peeking out.

Garnish: For added flavor, sprinkle a few sea salt flakes on top of each chocolate-covered cluster while the chocolate is still warm.

Chill: Allow the clusters to set at room temperature or place them in the refrigerator for about 20-30 minutes until the chocolate is firm.

Serve and Enjoy: Once set, gently lift the clusters off the parchment paper and enjoy your delightful Chocolate Caramel and Pecan Turtle Clusters!
