Instructions
In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), brown sugar, and vanilla extract.
Use a spatula or your hands to mix until well combined and the mixture is sticky and uniform.
Stir in the salt, mini chocolate chips, and ground flaxseed (if using) until fully incorporated.
Refrigerate the mixture for about 30 minutes to help it firm up, making it easier to roll into bites.
Once chilled, cover your hands in a bit of almond flour or powdered sugar to prevent sticking. Take tablespoon-sized amounts of the mixture and roll them into balls.
Place the energy bites on a baking sheet lined with parchment paper.
Once all the bites are formed, you can either enjoy them immediately or refrigerate them for later.
Notes
Best stored in an airtight container in the fridge for up to a week.
