Begin by lining a baking sheet or plate with parchment paper to prevent sticking.
Peel the bananas and slice them into bite-sized rounds, approximately 1/2 inch thick.
In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each interval, until the chocolate is completely melted and smooth.
Dip each banana slice into the melted chocolate, ensuring it is fully coated. Use a fork to lift the banana slice out, letting the excess chocolate drip off.
Place the chocolate-covered banana bites onto the prepared parchment paper. If desired, sprinkle chopped nuts, shredded coconut, or a pinch of sea salt on top of each bite before the chocolate hardens.
Once all banana slices are coated, transfer the baking sheet to the freezer for approximately 30 minutes, or until the chocolate is set firmly.
Once set, enjoy immediately or store the bites in an airtight container in the freezer for a frozen treat!
Notes
For a sweeter flavor, use milk chocolate instead of dark chocolate.
