Ingredients

2 ripe bananas

4 tablespoons natural peanut butter

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil (optional, for smooth melting)

Sea salt (optional, for garnish)

Wooden skewers or toothpicks (for handling)

Instructions

Prepare the Bananas: Peel the bananas and slice each banana into 1-inch thick rounds. Aim for around 10-12 rounds per banana.

Make the Sandwiches: Take one banana slice and spread about 1/2 tablespoon of peanut butter on top. Place another banana slice on top to create a mini sandwich. Repeat until all banana slices are used. You should have about 10-12 sandwiches.

Freeze the Sandwiches: Place the assembled banana peanut butter sandwiches on a parchment-lined baking sheet. Freeze them for about 1 hour or until solid.

Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

Coat the Sandwiches: Remove the frozen sandwiches from the freezer. Dip each sandwich into the melted chocolate, using a fork to fully coat and let excess chocolate drip off. If desired, sprinkle a pinch of sea salt on top of each sandwich before the chocolate sets.

Set the Chocolate: Place the coated sandwiches back on the parchment-lined tray and return to the freezer for about 30 minutes, or until the chocolate is firmly set.

Serve and Enjoy: Once the chocolate has hardened, your Chocolate Covered Frozen Banana Peanut Butter Sandwiches are ready to enjoy! You can keep any leftovers stored in an airtight container in the freezer.
