In a mixing bowl, combine the creamy peanut butter and powdered sugar. Stir until smooth and well combined.
Take about 1 teaspoon of the peanut butter mixture and place it between two pretzel twists, gently pressing them together to create little sandwiches. Repeat this process with the remaining pretzel twists and peanut butter mixture.
Place the assembled pretzel bites on a parchment-lined baking sheet and freeze for about 30 minutes, until firm.
While the pretzel bites are freezing, prepare the chocolate coating. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
Dip each frozen pretzel sandwich into the melted chocolate, ensuring it is fully coated. Use a fork to lift the coated pretzel bite out of the chocolate, allowing any excess chocolate to drip off before placing it back on the parchment paper.
While the chocolate is still wet, sprinkle a tiny pinch of sea salt on top of each pretzel bite for added flavor.
Once all bites are coated, refrigerate them for another 30 minutes, or until the chocolate is set.
