In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), cocoa powder, instant espresso powder, vanilla extract, and sea salt.
Mix everything until well combined; the mixture will be thick.
Stir in the dark chocolate chips and chopped nuts until evenly distributed.
Using your hands, roll the mixture into small bite-sized balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
Once all the mixture is rolled into balls, refrigerate the bites for at least 30 minutes to firm up.
After chilling, transfer the energy bites to an airtight container and store them in the fridge for up to one week or in the freezer for longer preservation.
Notes
Arrange the energy bites on a decorative plate, and drizzle some melted dark chocolate over the top for added flair before serving.
