200g dark chocolate (70% cocoa), chopped

3 large eggs, separated

3 tablespoons granulated sugar

1 cup heavy cream

1 teaspoon vanilla extract

1 cup fresh raspberries (plus extra for garnish)

Pinch of salt

Instructions
 

Melt the Chocolate: In a heatproof bowl over simmering water, melt the dark chocolate until smooth. Remove from heat and let it cool slightly.

    Prepare Egg Yolks: In a separate bowl, whisk the egg yolks with 2 tablespoons of the granulated sugar until creamy and light in color.

      Combine Mixtures: Stir the melted chocolate into the egg yolk mixture until fully combined. Add the vanilla extract and mix well.

        Whip the Cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate it.

          Whip the Egg Whites: In a clean bowl, beat the egg whites and a pinch of salt until soft peaks form. Gradually add in the remaining tablespoon of sugar, then continue beating until stiff peaks form.

            Fold in Egg Whites: Gently fold the egg whites into the chocolate and cream mixture until fully combined and no white streaks remain.

              Add Raspberries: Fold the fresh raspberries into the mousse mixture, reserving a few for garnish.

                Mold the Mousse: Spoon the mousse mixture into the silicone dome molds, pressing down slightly to remove air bubbles. Level the tops with a spatula.

                  Chill the Domes: Cover and refrigerate the molds for at least 4 hours or until fully set.

                    Unmold and Serve: Once set, carefully peel back the silicone molds to release the mousse domes. Serve on a plate garnished with additional raspberries.
