1 ciabatta or focaccia bread, cut in half horizontally

4 ounces salami, chopped

4 ounces capicola, chopped

4 ounces mortadella, chopped

4 ounces provolone cheese, diced

1 cup arugula or mixed greens

1/2 cup cherry tomatoes, quartered

1/4 cup red onion, finely chopped

1/4 cup black olives, pitted and sliced

2 tablespoons olive oil

2 tablespoons balsamic vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the chopped salami, capicola, mortadella, provolone cheese, arugula, cherry tomatoes, red onion, and black olives.

    In a small bowl, whisk together the olive oil, balsamic vinegar, oregano, salt, and pepper. Pour this dressing over the meat and vegetable mixture.

      Gently toss everything together until well combined and evenly coated with the dressing.

        Open the ciabatta or focaccia bread and layer half of the chopped mixture onto the bottom half.

          Place the other half of the bread on top, pressing down gently to hold everything together.

            Wrap the sandwich in foil and let it sit for 15-20 minutes to allow the flavors to meld.

              Slice the sandwich into smaller portions, if desired, and serve.
