Ingredients

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

4 oz cream cheese, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 teaspoon vanilla extract

1 large egg

1 teaspoon ground cinnamon

1/4 cup cinnamon sugar (for rolling)

For the Cheesecake Filling:

4 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Prepare the Dough: In a large bowl, beat the softened butter and cream cheese together until creamy. Add the granulated sugar, brown sugar, and vanilla extract, mixing until well combined.

Add Egg: Beat in the egg until fully incorporated.

Combine Mixtures: Gradually add the dry flour mixture to the wet mixture, stirring until just combined. Do not overmix.

Make Cheesecake Filling: In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.

Assemble Cookies: Take a tablespoon of cookie dough and flatten it slightly in your hand. Place a small dollop (about a teaspoon) of the cheesecake filling in the center, then wrap the dough around it to enclose the filling. Roll the ball in your hands to smooth it out.

Cinnamon Sugar Coating: Roll the cookie ball in the cinnamon sugar mixture to coat it evenly, then place it on the prepared baking sheet.

Bake: Repeat the process until all dough is used, spacing cookies about 2 inches apart. Bake for 12-15 minutes, until the cookies are lightly golden around the edges.

Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
