1 can (16 oz) refrigerated cinnamon roll dough

2 cups Granny Smith apples, peeled, cored, and diced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 cup brown sugar

1 teaspoon vanilla extract

1/4 cup chopped pecans (optional)

1/4 cup raisins (optional)

1 tablespoon all-purpose flour (to thicken)

Icing from the cinnamon roll dough can

Whipped cream or vanilla ice cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Cinnamon Roll Dough: Open the can of cinnamon roll dough and separate each roll. Flatten each roll into a disc, about 1/4 inch thick. This will form the base of your pie cups.

      Prepare the Apple Filling: In a mixing bowl, combine the diced apples, lemon juice, ground cinnamon, brown sugar, vanilla extract, and flour. If using, also add pecans and raisins. Mix until the apples are evenly coated.

        Form the Cups: Grease a muffin tin with cooking spray. Press each flattened cinnamon roll disc into the bottom and up the sides of each muffin cup, making sure to form a cup shape.

          Fill with Apples: Spoon the apple filling into each cinnamon roll cup, being careful not to overfill.

            Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the cinnamon roll crust is golden and the filling is bubbling.

              Drizzle with Icing: Once out of the oven, let the cups cool for a few minutes. Then, warm the icing packet from the cinnamon rolls in hot water or microwave for a few seconds. Drizzle the icing over the top of each cup.

                Serve: Serve warm, topped with whipped cream or a scoop of vanilla ice cream if desired.
