Ingredients
  

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup water

2 tablespoons unsalted butter

1 teaspoon vanilla extract

1/4 cup granulated sugar (for coating)

1 tablespoon ground cinnamon

Oil for frying (canola or vegetable)

Instructions
 

In a medium saucepan, combine the water, butter, and vanilla extract. Bring to a boil over medium heat.

    Once boiling, remove from heat and stir in the flour, sugar, baking powder, and salt. Mix until a dough forms and pulls away from the sides of the pan.

      Allow the dough to cool for about 5 minutes, then transfer it to a piping bag fitted with a star tip.

        In a large pot or deep fryer, heat oil over medium-high heat to 350°F (175°C).

          Pipe 2-inch lengths of dough directly into the hot oil, cutting them off with scissors. Fry for about 2-3 minutes or until golden brown, turning occasionally.

            Once cooked, remove the churro bites with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

              In a shallow bowl, mix together the granulated sugar and cinnamon. Toss the churro bites in the cinnamon sugar mixture until fully coated.

                Serve warm and enjoy with chocolate sauce or caramel for dipping!
