Instructions
Preheat your waffle iron according to the manufacturer's instructions.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar until well combined.
In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.
Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
In a small saucepan, combine the water, 1/4 cup of granulated sugar, and cinnamon. Bring to a gentle boil over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool slightly.
Slowly add the cooled cinnamon-sugar mixture to your waffle batter and fold gently until incorporated.
Pour a ladleful of the batter into the preheated waffle iron and cook according to the manufacturer's instructions, usually around 3-5 minutes, until golden brown and crisp.
While the waffles are cooking, mix the 1/4 cup of granulated sugar and the remaining cinnamon in a shallow bowl.
Once the waffles are done cooking, immediately remove them from the waffle iron and sprinkle or dip them in the cinnamon sugar mixture until fully coated.
Serve the churro waffles warm, drizzled with chocolate or caramel sauce if desired.
