Ingredients
  

1 loaf of day-old bread (such as brioche or challah)

4 large eggs

1 cup milk

1/4 cup heavy cream

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

Pinch of salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

1 tablespoon ground cinnamon (for topping)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a standard muffin pan with cooking spray or line with muffin liners.

    Cut the day-old bread into small cubes (approximately 1-inch pieces) and set aside in a large bowl.

      In a separate bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, 1 teaspoon of ground cinnamon, and a pinch of salt until well combined.

        Pour the egg mixture over the bread cubes and gently fold to combine, ensuring all the bread is soaked. Allow this mixture to sit for about 15 minutes to absorb the liquid.

          While the bread is soaking, in a small bowl, mix together the melted butter, brown sugar, and 1 tablespoon of cinnamon until well combined.

            After 15 minutes, stir half of the brown sugar mixture into the soaked bread.

              Divide the bread mixture evenly among the muffin cups, filling them about 3/4 full. Swirl in small amounts of the remaining brown sugar mixture on top of each muffin for extra flavor.

                Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

                  Once done, let them cool in the muffin pan for 5 minutes before transferring to a wire rack.

                    Serve warm and enjoy your delicious Cinnamon Sugar French Toast Muffins! You can sprinkle additional cinnamon sugar on top before serving if desired.
