1 lb (450g) ground beef

1 medium onion, diced

2 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 can (14 oz) diced tomatoes

4 cups beef broth

1 cup elbow macaroni

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

1 tbsp olive oil

1 cup frozen peas

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Instructions
 

Brown the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon.

    Sauté Vegetables: Add the diced onion, carrot, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute.

      Combine Ingredients: Stir in the can of diced tomatoes (with juice), beef broth, dried oregano, and dried basil. Bring to a boil.

        Add Macaroni: Once boiling, reduce heat to a simmer and add the elbow macaroni. Cook according to package instructions, usually around 8-10 minutes, until al dente.

          Finish the Soup: In the last 3 minutes of cooking, add the frozen peas. Season the soup with salt and pepper to taste.

            Serve: Ladle the soup into bowls and top with grated Parmesan cheese and fresh basil leaves for garnish. Enjoy hot!
