2 hard-boiled eggs, diced

1 avocado, diced

1 cup cooked and crumbled bacon

1 cup cooked chicken breast, diced (grilled or roasted)

1/2 cup cherry tomatoes, halved

1/4 cup blue cheese crumbles

1/4 cup red onion, thinly sliced

1/4 cup olive oil

2 tablespoons red wine vinegar (or apple cider vinegar)

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

Start by preparing the hard-boiled eggs. Boil water in a pot, gently add the eggs, and cook for about 10-12 minutes. Once done, transfer them to an ice bath to cool, then peel and dice.
