Classic Polish Potato Soup (Kartoflanka)

Ingredients
  

4 large potatoes, peeled and diced

1 large onion, finely chopped

2 carrots, grated

2 stalks of celery, diced

4 cups vegetable broth

1 bay leaf

2 tablespoons butter

1 cup heavy cream

Salt and pepper to taste

Fresh dill, chopped, for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes, until it's translucent.

    Stir in the grated carrots and diced celery; cook for another 3 minutes until they start to soften.

      Add the diced potatoes to the pot and stir well to mix everything together.

        Pour in the vegetable broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.

          Once the potatoes are cooked through, remove the bay leaf from the pot.

            Using a hand blender, puree the soup until smooth, or mash some of the potatoes with a potato masher for a chunkier texture, if desired.

              Stir in the heavy cream and season with salt and pepper to taste. Allow the soup to heat through for an additional 5 minutes.

                Serve hot, garnished with freshly chopped dill.
