2 salmon fillets (about 6 oz each)

1 cup coconut milk

2 tablespoons red curry paste

2 cloves garlic, minced

2 tablespoons unsalted butter

1 teaspoon ginger, grated

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon lime juice

Fresh cilantro, for garnish

Salt and pepper to taste

Lime wedges, for serving

Prepare the sauce: In a small saucepan over medium heat, melt 1 tablespoon of butter. Add minced garlic and grated ginger, sautéing until fragrant (about 1 minute).

    Add the curry base: Stir in the red curry paste, cooking for another minute to release its flavors.

      Combine ingredients: Pour in the coconut milk and soy sauce, stirring well to combine. Allow the sauce to simmer for about 5 minutes, letting it thicken slightly.

        Sear the salmon: While the sauce simmers, heat 1 tablespoon of butter in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper, then place them skin-side down in the skillet. Cook for 4-5 minutes without moving, until the skin is crispy.

          Finish the salmon: Carefully flip the salmon fillets and pour the coconut curry sauce over them. Gently spoon some sauce over the top of the salmon, cover with a lid, and let it cook for another 3-4 minutes or until the salmon is cooked through and flakes easily with a fork.

            Finalize the dish: Once cooked, remove from heat and drizzle with lime juice.

              Serve: Plate the salmon and spoon the remaining coconut curry sauce over the top. Garnish with fresh cilantro and serve with lime wedges on the side.
