Ingredients

1 cup coconut water

1/2 cup freshly squeezed lemon juice (about 3-4 lemons)

1/4 cup honey or agave syrup (adjust to taste)

1 teaspoon dried culinary lavender buds

2 cups cold water

Ice cubes

Lemon slices and fresh lavender sprigs for garnish

Instructions

In a small saucepan, bring 1 cup of cold water to a gentle simmer.

Once simmering, remove it from the heat and add the dried lavender buds.

Steep the lavender in the hot water for about 10 minutes for a flavorful infusion.

Strain the lavender syrup through a fine-mesh sieve into a bowl, discarding the lavender buds.

In a large pitcher, combine the coconut water, freshly squeezed lemon juice, honey (or agave syrup), and the lavender syrup. Stir well until all the ingredients are thoroughly mixed.

Add the remaining 1 cup of cold water to dilute the mixture to your preferred taste and stir again.

Taste and adjust sweetness if necessary by adding more honey/agave syrup.

Chill the mocktail in the refrigerator for at least 30 minutes before serving.

To serve, fill glasses with ice cubes and pour the coconut lavender lemonade over. Garnish with lemon slices and a sprig of fresh lavender.
