4 boneless, skinless chicken thighs

1 can (14 oz) coconut milk

1/4 cup fresh lime juice (about 2 limes)

Zest of 1 lime

2 garlic cloves, minced

1 tablespoon fresh ginger, minced

1 teaspoon soy sauce (or tamari for gluten-free)

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

Salt and freshly ground pepper, to taste

2 tablespoons olive oil

Fresh cilantro, for garnish

Marinate the Chicken: In a large bowl, whisk together the coconut milk, lime juice, lime zest, minced garlic, minced ginger, honey, soy sauce, coriander, cumin, salt, and pepper. Add the chicken thighs and ensure they are well-coated in the marinade. For the best flavor, cover and refrigerate for at least 1 hour, or up to overnight.

    Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Remove the chicken from the marinade, allowing excess marinade to drip off (reserve the marinade for later), and place them in the skillet. Sear the chicken for 5-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/74°C).

      Make the Sauce: Once the chicken is cooked, remove it from the skillet and keep it warm. In the same skillet, pour in the reserved marinade and bring it to a gentle simmer. Cook for about 5-10 minutes until the sauce thickens slightly, stirring occasionally.
