coconut milk
1
ripe
mango, peeled and diced

tablespoons
honey or maple syrup

tablespoons
chia seeds

teaspoon
vanilla extract

pinch
salt

fresh mint leaves for garnish (optional)
Instructions
In a blender, combine the coconut milk, diced mango, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
In a bowl, mix the chia seeds into the blended coconut mango mixture. Stir well to ensure the chia seeds are evenly distributed.
Let the mixture sit for about 5 minutes, then stir again. This will help the chia seeds start to swell and thicken the mixture.
Pour the mixture into popsicle molds, leaving a small amount of space at the top for expansion during freezing.
Insert popsicle sticks into the molds and freeze for at least 4-6 hours, or until completely solid.
To release the pops, run warm water over the outside of the molds for a few seconds and gently pull them out.
Notes
Serve the pops on a colorful plate garnished with fresh mint leaves for an extra touch of freshness.
