4 large potatoes, peeled and diced

1 cup kale or cabbage, finely chopped

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

1 cup milk (or non-dairy alternative)

2 tablespoons butter (or olive oil)

Salt and pepper to taste

1 teaspoon freshly grated nutmeg (optional)

Chopped green onions for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced potatoes and sauté for about 3-4 minutes, stirring occasionally.

        Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer, cover, and let it cook for about 15-20 minutes or until the potatoes are tender.

          Once the potatoes are cooked, add the chopped kale or cabbage and cook for an additional 5 minutes until they are wilted.

            Using an immersion blender, puree the soup to your desired consistency (smooth or slightly chunky). Alternatively, you can blend in batches using a countertop blender.

              Stir in the milk, and season with salt, pepper, and nutmeg (if using). Heat through for a couple of minutes, adjusting seasoning as necessary.

                Serve hot, garnished with chopped green onions.
