1 medium head of green cabbage, chopped

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (14 oz) diced tomatoes

1 cup beef broth

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup cooked quinoa or rice (optional, for added bulk)

2 tablespoons olive oil

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.

      Add the ground beef to the skillet, breaking it apart. Cook until browned and cooked through, approximately 6-8 minutes. Drain any excess grease.

        Stir in the chopped cabbage, diced tomatoes (with their juices), beef broth, oregano, paprika, salt, and pepper. If using, also add the cooked quinoa or rice. Mix well to combine all ingredients.

          Cover the skillet and let it simmer for about 10 minutes, or until the cabbage is tender, stirring occasionally.

            Transfer the mixture to a greased 9x13 baking dish. Spread the mixture evenly.

              Sprinkle the shredded cheddar cheese over the top of the casserole.

                Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.

                  Remove from the oven and allow to cool for a few minutes before serving.
