1/2 cup shredded cheddar cheese

1/4 cup red bell pepper, diced

1/4 cup onion, diced

1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)

Salt and pepper to taste

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat a drizzle of olive oil over medium heat. Sauté the diced onion and red bell pepper until they are soft, about 5 minutes.

      Add the cubed sweet potatoes and sauté for another 3-4 minutes, mixing gently.

        In a mixing bowl, whisk together the eggs, milk, sage, salt, and pepper until well combined.

          Pour the egg mixture over the sautéed vegetables in the skillet, swirling gently to distribute.

            Sprinkle the shredded cheddar cheese evenly over the top.
