Ingredients

2 cups rotisserie chicken, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

1/2 cup spinach, chopped (fresh or frozen)

1/4 cup sun-dried tomatoes, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 package of pizza dough (store-bought or homemade)

1 egg, beaten (for egg wash)

Olive oil for drizzling

Instructions

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the shredded rotisserie chicken, mozzarella cheese, cream cheese, chopped spinach, sun-dried tomatoes, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until well incorporated and creamy.

On a lightly floured surface, roll out the pizza dough into a rectangle about 1/4 inch thick.

Cut the dough into large rectangles, approximately 4x6 inches each. You should be able to get about 6 pieces from one dough package.

Spoon a generous amount of the chicken filling onto one side of each rectangle, leaving about 1 inch of space around the edges.

Fold the other half of the dough over the filling and pinching the edges firmly to seal. Crimp with a fork for a decorative touch.

Brush the tops of each chicken bake with the beaten egg to give them a golden finish. Drizzle olive oil over the top for extra flavor.

Place the chicken bakes on a baking sheet lined with parchment paper.

Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.

Allow to cool for a few minutes before serving.

                      Prep Time: 15 mins | Total Time: 40 mins | Servings: 6

                        - Presentation Tips: Serve the chicken bakes on a wooden board or platter, and cut them in half for a beautiful display of the cheesy filling. Garnish with fresh parsley or basil for a pop of color.
