2 cups dried pinto beans, rinsed and sorted

4 cups water

1 small onion, chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

1 bay leaf

1 tsp salt (adjust to taste)

2 tbsp olive oil

Fresh cilantro for garnish (optional)

Soak the Beans: Place the rinsed pinto beans in a large bowl and cover with water. Soak overnight. If you're short on time, you can use the quick soak method by boiling the beans for 2 minutes, then letting them sit covered for 1 hour.

    Prepare the Pressure Cooker: Drain and rinse the soaked beans. In a pressure cooker (or large pot), heat olive oil over medium heat. Sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

      Spice It Up: Stir in ground cumin, chili powder, and smoked paprika, coating the onions and garlic evenly. Cook for 1-2 minutes to release the spices' aroma.

        Cook the Beans: Add the rinsed pinto beans to the pot along with 4 cups of water and the bay leaf. If using a pressure cooker, seal the lid and cook on high pressure for 25-30 minutes (natural release). For a traditional pot, bring to a boil, then reduce heat to low, cover, and simmer for about 1.5-2 hours, or until beans are tender.
