4 cups fresh corn kernels (about 6-8 ears of corn)

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, peeled and diced

4 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Add the minced garlic and continue to sauté for another minute until fragrant.

      Stir in the diced potatoes and cook, stirring occasionally, for about 3-4 minutes.

        Add the fresh corn kernels to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes or until the potatoes are tender.

          Remove the pot from the heat and use an immersion blender to puree the soup until smooth. (If you prefer a chunkier texture, you can blend only half of the soup and leave the other half intact.)

            Return the soup to low heat and stir in the coconut milk and smoked paprika. Allow it to simmer for an additional 5 minutes. Season with salt and black pepper to taste.

              Serve the soup hot, garnished with fresh cilantro and a squeeze of lime for added zest.
