4 cups cornbread, crumbled (homemade or store-bought)

1 cup celery, finely chopped

1 cup onion, diced

1 cup mushrooms, sliced

1/2 cup pecans, chopped

1/4 cup fresh parsley, chopped

2 teaspoons dried sage

1 teaspoon dried thyme

4 cups vegetable broth

3 large eggs, beaten

Salt and pepper to taste

1/4 cup unsalted butter

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, melt the butter over medium heat. Add the chopped onion, celery, and mushrooms. Sauté until the vegetables are tender, about 5-7 minutes.

      In a large mixing bowl, combine the crumbled cornbread, sautéed vegetables, pecans, parsley, sage, thyme, salt, and pepper. Mix until well combined.

        In a separate bowl, whisk together the vegetable broth and beaten eggs. Pour this mixture over the cornbread mixture and stir gently until everything is evenly moistened.

          Transfer the mixture to a greased 9x13 inch baking dish and spread evenly.

            Bake in the preheated oven for 30-35 minutes or until the top is golden brown and slightly crispy.

              Remove from the oven and let it cool for a few minutes before serving.
