1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar)

1/4 cup unsalted butter, melted

2 large eggs

1 jalapeño, finely diced (remove seeds for less heat)

1/2 cup grated cheddar cheese (optional)

1/4 cup honey

Instructions
 

Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or grease it with non-stick spray.

    In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt until evenly combined.

      In another bowl, combine the buttermilk, melted butter, eggs, and honey. Whisk well until the mixture is smooth.

        Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in the diced jalapeño and grated cheddar cheese, if using, until evenly distributed.

            Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

              Bake in the preheated oven for 18-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                Once baked, remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
