Ingredients

1 cup cottage cheese

3 large eggs

1/4 cup almond flour

1/4 teaspoon baking powder

1/2 teaspoon garlic powder (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper (optional)

Instructions

Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

In a mixing bowl, add the cottage cheese and eggs. Using a hand mixer or whisk, blend until smooth and creamy with no lumps.

In a separate bowl, sift together the almond flour, baking powder, garlic powder (if using), salt, and black pepper (if using).

Gradually fold the dry ingredients into the cottage cheese-egg mixture until fully incorporated. Be gentle to keep the mixture airy.

Using a large spoon or ice cream scoop, dollop the mixture onto the prepared baking sheet, creating round mounds spaced apart (about 4 inches apart).

Bake in the preheated oven for approximately 25-30 minutes, or until the tops are set and golden.

Once baked, allow the cloud bread to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

                Prep Time: 10 minutes | Total Time: 40 minutes | Servings: 8

                  - Presentation Tips: Serve the cloud bread on a wooden board with a side of fresh herbs or a dollop of cream cheese, and consider garnishing with a sprinkle of fresh chives for an elegant touch. Pair it with your favorite dips or as a sandwich base for a delightful twist!
