1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon vinegar, let sit for 5 minutes)

1/4 cup melted butter (plus extra for greasing)

1 cup sweet corn kernels (fresh, frozen, or canned)

1/2 cup shredded cheddar cheese (optional for a cheesy twist)

Instructions
 

Preheat your oven to 400°F (200°C). Grease a 9-inch cast iron skillet or baking pan with butter and place it in the oven to heat up.

    In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt. Whisk together until all dry ingredients are well mixed.

      In another bowl, whisk together the eggs, buttermilk, and melted butter until smooth.

        Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the cornbread light and fluffy.

          Fold in the sweet corn kernels and shredded cheddar cheese, if using, until evenly distributed.
