1 cup cooked black beans

1 cup corn kernels (fresh or frozen)

1 cup cooked quinoa

1 cup diced tomatoes

1 cup shredded cheddar cheese

1/2 cup diced red onion

1 jalapeño, finely chopped (optional for heat)

2 tablespoons taco seasoning

1/4 cup fresh cilantro, chopped

4 large flour tortillas

1 avocado, sliced

Sour cream for serving

Hot sauce for drizzling (optional)

Instructions
 

In a large mixing bowl, combine the cooked black beans, corn, cooked quinoa, diced tomatoes, shredded cheddar cheese, red onion, jalapeño (if using), taco seasoning, and chopped cilantro. Mix well until all ingredients are evenly incorporated.

    Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side until pliable.

      Lay each tortilla flat and evenly distribute the filling mixture in the center of each tortilla, making sure not to overfill.

        Fold the sides of the tortilla inwards over the filling, then roll from the bottom to the top, tucking in the sides as you go, to create a burrito shape.

          For that extra cowboy flair, grill the burritos in the same skillet for about 2-3 minutes on each side or until they are golden and crispy.

            Remove from the skillet and cut each burrito in half diagonally. Serve with sliced avocado, sour cream, and a drizzle of hot sauce for added flavor.
