Ingredients

8 oz linguine pasta

1 lb chicken breast, cubed

4 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions

Cook the Linguine: Begin by boiling a pot of salted water. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add cubed chicken breast, season with salt and pepper, and cook for about 6-8 minutes, or until golden and cooked through. Remove from the skillet and set aside.

Prepare the Cowboy Butter: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, toss in minced garlic, smoked paprika, onion powder, oregano, and cayenne pepper. Sauté for about 1-2 minutes until fragrant.

Incorporate the Sun-Dried Tomatoes: Add the chopped sun-dried tomatoes to the skillet, stirring to combine with the butter and spices. Cook for another 2 minutes.

Make the Sauce: Pour in the heavy cream and stir well, allowing the sauce to simmer for about 5 minutes until it thickens slightly. If it becomes too thick, gradually add in the reserved pasta water until you achieve your desired consistency.

Combine Pasta and Chicken: Add the chicken back into the skillet along with the cooked linguine. Toss everything together until the pasta is coated in the creamy sauce. Adjust seasoning with salt and pepper as needed.

Serve: Plate the Cowboy Butter Chicken Linguine and garnish with fresh parsley and a sprinkle of grated Parmesan cheese, if desired.
