Ingredients
  

4 ears of fresh corn, husked

1/2 cup unsalted butter, softened

2 tablespoons minced garlic

1 tablespoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

Zest and juice of 1 lime

Salt and pepper to taste

1/4 cup fresh parsley, finely chopped

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a mixing bowl, combine the softened butter, minced garlic, smoked paprika, cayenne pepper, lime zest, lime juice, salt, and pepper. Mix until well combined to form the cowboy butter.

      Place the husked corn on a baking sheet lined with parchment paper.

        Generously slather the cowboy butter mixture over each ear of corn, ensuring they're well coated.

          Wrap each corn cob in aluminum foil, creating a sealed packet.

            Roast the foil-wrapped corn in the preheated oven for about 25-30 minutes, turning halfway through to ensure even cooking.

              Once done, carefully unwrap the foil (watch out for steam!) and sprinkle the roasted corn with fresh parsley and Parmesan cheese if using.

                Serve the corn warm, with extra lime wedges on the side for squeezing over the top if desired.
