Salt and pepper, to taste

1 cup sliced mushrooms (shiitake or cremini work well)

1/2 cup shredded cheddar cheese

4 slider buns

1/4 cup mayonnaise

2 tablespoons Dijon mustard

2 tablespoons chopped fresh parsley

2 tablespoons chopped chives

1 tablespoon Worcestershire sauce

1 tablespoon garlic powder

1 tablespoon onion powder

Optional: pickled jalapeños for heat

Prepare the Cowboy Butter: In a small bowl, mix together the mayonnaise, Dijon mustard, parsley, chives, Worcestershire sauce, garlic powder, and onion powder until smooth. Set aside to allow the flavors to meld.

    Cook the Steak: Season the flank steak generously on both sides with salt and pepper. Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes per side, or until it reaches the desired doneness. For medium-rare, aim for an internal temperature of 135°F (57°C). Remove from heat and let it rest for 5 minutes.

      Sauté the Mushrooms: In the same skillet (add a bit of oil if needed), add the sliced mushrooms and sauté for 3-4 minutes until golden and tender. Season lightly with salt and pepper.

        Slice the Steak: Once the steak has rested, slice it against the grain into thin strips.

          Assemble the Sliders: Toast the slider buns briefly on the grill or in the skillet. On the bottom half of each bun, layer a slice of steak, a spoonful of sautéed mushrooms, and a sprinkle of cheddar cheese. Drizzle with Cowboy Butter sauce.
