Ingredients
  

1 lb ground beef

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10.5 oz) cream of mushroom soup

1 can (10.5 oz) diced tomatoes with green chilies, undrained

1 cup shredded cheddar cheese

1 tsp chili powder

1 tsp garlic powder

1/2 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

1 bag (about 24 oz) frozen tater tots

Chopped green onions and cilantro for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.

      Stir in the black beans, corn, cream of mushroom soup, diced tomatoes with green chilies, and all the spices (chili powder, garlic powder, cumin, paprika, salt, and pepper) into the skillet. Mix well until combined and heated through.

        Transfer the beef and veggie mixture into a greased 9x13 inch baking dish.

          Evenly spread the tater tots over the top of the mixture.

            Sprinkle the shredded cheddar cheese generously over the tater tots.

              Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden and crispy, and the cheese is melted and bubbly.

                Remove from the oven and let it cool for a few minutes. Serve garnished with chopped green onions and cilantro if desired.
